Typically, to maximize the amount of terpenoids extracted into wort, hops is added during the late kettle boil or early during dry hopping. On the other hand, dry hopping or addition of hops during late fermentation is preferred to extract thiols from hops and make them available for biotransformation.

When should dry hops be added?

The right time to add the hops to the fermenter is just as the fermentation starts to slow down. This is usually apparent by the head (or kraeusen) starting to diminish, which usually coincides with a decreased bubbling in the airlock. Typically this will be three to four days after fermentation has begun.

What is biotransformation dry hopping?

Generally defined as the process by which a substance changes from one compound into another by way of chemical reactions, biotransformation purportedly occurs in beer when certain terpenoids in hops are in the presence of specific yeast strains during active fermentation, which transforms them into other terpenoids.
